These organic green tea pearls come from hunan province in China. Jasmine plants grow, as do tea bushes at high altitude. The youngest green tea leaves are harvested in early spring. Only in late summer, the jasmine flowers when they are in bloom are picked at the beginning of the day when the buds are still closed. They are kept cool until the evening, then the buds are placed on the tea. Because tea has the property of being absorbent, when the buds open and release their characteristic aroma, this is absorbed into the tea. After 4 hours, all flowers are removed and this process is repeated several times. The fragrant tea leaves are rolled up by hand into pearls, so that the aroma of the jasmine flowers is trapped in the pearls. When the tea is steeped, the pearls unfold into beautiful large leaves, releasing the jasmine aroma.
