Azumatsuru Shuzo

The Azumatsuru brewery, founded in the late Edo period and revived since 2009, is located in Saga in the deep south of Japan mainly uses local rice varieties, among others. the rice Saga no Hana, a local variety that gives the sake a very typical and unique character and water that flows from the flanks of Mount Taku.

 

Azumatsuru mainly wants to convey the story of the producers in their sake and makes special products with special types of rice or unusual koji and thus shows how perfectly they control the production process.
