Mutsu Hassen from the northof Japan is a unique brewery. In contrast to the classic production methodes, Mutsu Hassen chooses a fast initial fermentation at high temperature.

 

An exceptionally elegant sake from this largest brewery is made according to the
kijoshu
method in which part of the used water is replaced by previously made sake. The result is an unusually rich and deep palette of flavours. Like a Sauternes, this one
Kijoshu
sake is a perfect match for desserts.
