This junmai sake is a pearl from the Azumatsuru brewery from Saga in the deep south of Japan. The rice Saga no Hana used is a local variety and gives the sake a very typical and unique character.
The nose surprises with an interplay of banana, milk, chololade and light soy sauce. The body is medium-soft, but at the same time rich in texture and umami.
