This soy sauce has a light color compared to the dark soy sauce, and is also called “usukuchi shoyu” in Japanese. The color is light, so if you use it in stewed dishes, the taste and color of the ingredients used will come into their own. This light soy sauce does not differ that much from the dark soy sauce in terms of taste, so it is easy to alternate.

This soy sauce is artisanally fermented by a family business that is already in its7th generation. For the small bottles of 150ml we have chosen a shape reminiscent of the traditional “Conprador” bottle, a white porcelain sake bottle from the 18th Century Edo period.
