This Honwasabi paste is made 100% from the Wasabia Japonica from the cradle of Azumino in the Nagano prefecture in Japan. Due to its pungent spiciness and aroma, it is an essential component of many dishes, and it is also known to have many health benefits. Hon wasabi from Azumino, grown with meltwater from the Northern Alps and a cool climate, is one of the most important Japanese producers of wasabi. The most common cultivation method is the “flat land method,” which uses spring water in wasabi fields excavated in flat land. Wasabi is very delicate. Since it is sensitive to high temperatures and direct sunlight, we use a unique growing method and create shade using a black cloth called cheesecloth.
