For the processing process of this green tea from the well-known region of Uji near Kyoto, only the higher and more qualitative shoots of the tea plant are used, which by exposure to the sun generates many catechins and therefore produces a slight bitterness. After picking, the leaves are steamed (and not stir-fried as in China) and dried in a light green flattened leaf. This green sencha tea produces a bright and light tea with a well-balanced and mild taste and a grass-like aroma.

Some Tips

This green tea can also taste very refreshing cold with ice cubes in the summer. Moreover, it looks like white wine, which lends itself perfectly to food pairing with vegetarian or fish dishes
Tip for a delicious tea cocktail: Mix 125ml cold/ warm sencha tea (5gr 30 sec in 200 ml boiling water), 1/2 lime, 10 mint leaves, 2 tbsp cane sugar, 45ml white rum and ice cubes in a shaker. Serving with ice cubes and a slice of lime is guaranteed to be a success for a surprising apero during the end-of-year celebrations!
