This Japanese Matcha or green tea powder is a blend of tea from Kagoshima, known for its organic tea. Matcha’s production process is similar to that of Gyokuro tea and very labour-intensive. In the shade, the plants make extra chlorophyll, so that the leaves get their bright color. The most beautiful “Tencha” leaves are picked, then steamed and dried. For the food industry, the tea leaves then go into silos in their entirety and are ground there by machine. This cheaper ‘cooking grade’ variant is ideal for use in desserts or other culinary applications. Purely to drink matcha, it is better to opt for the ceremonial matcha.
