Dried Sansho Pepper

Zanthoxylum piperitum, commonly known as Japanese pepper (sansho), is a spiky, aromatic shrub from the rue family (Rutaceae) that originates from Japan and Korea. The peppercorns are widely used in Japan as a culinary seasoning. At Kaori, we sell this dried and freshly pickled in salt.

The sansho peppercorn not only provides a sharp, spicy flavour but also offers a refreshing citrus aroma, as it is a small fruit related to yuzu. This peppercorn is used in many Japanese dishes, such as with meat, grilled fish, sashimi, sushi, tempura, hotpot, and onigiri. Dried Sansho can be used as an alternative to yuzu, making it ideal for sauces and seasonings. Moreover, it pairs well with chocolate and gelato.
We are the first company in Japan to offer organic sansho peppercorns on the European market.

To preserve the characteristic aroma and vibrant colour, our organic sansho peppercorns are quickly processed immediately after harvest. The fine stems are carefully and repeatedly removed by hand.

Our sansho peppercorns are known for their exceptional quality and are used in top restaurants in Kyoto.
