Hassen Kijoshu

Mutsu Hassen from the far north of Japan is a unique brewery that opts for a quick first fermentation at high temperature. This exceptionally elegant sake is made using the kijoshu method, where part of the water used is replaced by previously made sake. The result is an unusually rich and deep flavour palette. Like a Sauternes, this sake is a perfect match for desserts.
