Azumatsuru Black Koji Nama
For this exceptional junmai ginjo, the Azumatsuru brewery from the deep south of Japan chose black kōji as a fermentation starter instead of the traditional yellow kōji. The result is a full-bodied sake that closely resembles white wine in terms of flavour profile, yet still has a very Japanese character. The aroma is reminiscent of banana, melon, and grapefruit.
