Yuho Junmai

The CEO of the Mioya brewery is Miho Fujita, who took over the brewery in 2003 — thus the only female CEO of a sake brewery in Japan. She stopped mass production and fully committed to handcrafted sake. Yuho sake, named after the UFOs that are frequently seen in the Noto region, is brewed in the characteristic climate of the peninsula — a unique balance of acidity and umami, perfect for food pairing.
